My mother made rock cakes as we call them. I never have, but think I will now! I’ll have to see what her recipe is. We’re aussies, but my mother’s mum had an Irish father, so maybe that’s why we grew up with them. I don’t think I’ve seen anyone else make them.

Maybe the ever popular Air Fryer could help launch the humble Rock Bun into the new millennium! They say it gives them a lovely crispy outer coating. Must give it a try. Rock On!
