Wow, what a treasure! It's getting harder and harder to get hold of Middle Eastern/Mediterranean sumac, so we've had to be very stingy with what's left in our pantry.
All very interesting, JP. I buy sumac from Mr Bell. He's on line now, as well as in Cork's English Market.
