Irish cakes without borders
Ginger biscuits were always very hard and we would usually dip them in hot tea to save our teeth!
One of my mother’s aunts used it instead of sponge at the bottom of a trifle. Tinned apricots also featured if I recall correctly.
Very interesting.
I love gingerbread but my hubbie doesn't so it's not made very often in my house. I would end up eating the whole cake. Not an ideal situation 😕
Not good at all. It's why I don't make cheesecake or carrot cake at home. I just eat it all. 🤯
Good luck with your new restaurant Kombu. I have been reading about it in Irish Country Living. Will check it out when I am in Galway during the summer.
Thanks.
